There is something about cookies that is just so lovable. Easy, bite-sized, portable palmfuls of goodness that can be customized to fit just about any taste or occasion. Whether you are packing up a backpack and running to the bus or sipping afternoon tea in a fancy hat, there is most certainly a cookie out there for you. This particular recipe for No Bake Almond Butter Cookies is ideal for busy, health-minded folks looking for a hint of sweetness in their day. Made from just 5 real food ingredients in about two minutes with no refined sugar or grain flours to fuss with, these cookies deserve a spot in your dessert repertoire.

As you may have guessed from the title, the main ingredient in this recipe is almonds. We recommend using sprouted almonds (almonds that have been prepared by soaking and drying) to neutralize the phytates and enzymes inhibitors these nuts naturally carry, and increase their overall digestibility. By using these traditional methods to improve vitamin and mineral availability, nutrition can be maximized while taste is preserved. If there is a different nut or seed variety that you are fond of apart from almonds, I am confident that just about any type would be tasty in this recipe. Can you imagine cashew, pecan, walnut and macadamia versions? How dreamy! I will show you the basic process, and leave it up to you to adjust creatively.

The other aspect of this recipe that deserves your artistic interpretation is when you can eat these cookies. By this I mean that there seems to be a lingering idea that cookies are for dessert ONLY. However, when you are making cookies out of high protein, low sugar, and mineral-rich ingredients, this rule doesn't necessarily apply. Try these cookies for breakfast or as an energy-boosting afternoon snack for example. Just be mindful that if you leave them out in warm temperatures for too long, the almond butter will melt and the cookies will all mush together. This will still be tasty of course, but it will definitely be one big ooey-gooey mess. For transport, I recommend storing chilled in a single layer or individually wrapped.

No-Bake Sprouted Almond Butter Cookies

Makes about 9 small rounds

1/2 cup sprouted almonds (homemade or Blue Mountain Organics

1/4 cup almond butter (homemade or Better Than Roasted Nut Butters)

1/2 cup medjool dates, pitted 

1/2 tablespoon coconut flour (like ours!)

1 tsp vanilla extract

 

Directions

Place sprouted almonds in food processor and pulse until chopped into coarse pieces.

Add in remaining ingredients and blend thoroughly. The dough should be evenly mixed and able to stick together easily.

Scoop out dough 1 tablespoon at a time and use hands to roll into a ball shape.

Flatten the balls by using a fork and pressing down in a criss-cross pattern.

Place flattened rounds on a parchment paper covered plate in the refrigerator for about 40-60 minutes. Serve chilled.  Store in a single layer in an airtight container for future nibbling. Enjoy!
